Pizza Cupcakes

I LOVE pizza, but am extremely lactose intolerant, so rarely get to have this treat.  I got the idea of pizza cupcakes from facebook or pinterest (I can’t remember which), only they were made with Pillsbury refrigerated biscuits, which I am not a fan of.  I purchased premade pizza dough and used mozzarella Veggie Shreds.    

I used my Texas muffin pans for giant-sized muffins.  To make, simply spray the tins with cooking spray and press some pizza dough in the bottom, then layer pizza sauce, “cheese”,  and pepperoni.  I love a little cornmeal and garlic salt on my crust, so I also sprinkled some cornmeal in the bottom of the tin and sprinkled some garlic salt on the dough before layering the other ingredients. Bake at about 400 degree for 20 minutes. YUM!!!!!
