We’re celebrating my mother’s birthday today. When I asked her what kind of cake she wanted, there was no question that she wanted the same raspberry cake that I’ve made her the past few years now. And others in the family have asked for the same cake. Once they’ve tried it, I think this has become everyone’s favorite cake. I cam across this recipe on the internet several years ago when searching for a raspberry (my mother’s favorite flavor) cake recipe. One of the best things about this cake is that it’s not overly sweet like so many cakes and frostings are.
